Pasta is a staple in our house but I wanted to do something different than just pasta and sauce. So we added some sausage, peppers and onions and topped it with some parmesan cheese and YUM. It was so filling and delicious!
1 Rope Sausage, sliced
1 Green Pepper, sliced
1 Red Pepper, sliced
1 Onion, sliced
1 clove garlic
1 tbsp dried basil
2 tbsp dried parsley
29 oz Stewed tomatoes, drained
pinch red pepper flakes
black pepper to taste
Salt to taste
8 oz Bow Tie Pasta
Preheat oven to 350 F.
In a medium saucepan over low heat, saute garlic.
Add parsley, basil, pepper and stir.
Add tomatoes and cover.
Increase heat and simmer.
Add red pepper flakes and lower heat to low and cook for 30 minutes.
While sauce is low simmering, place peppers, sausage and onions in a bowl.
Drizzle with olive oil and sprinkle with pepper, salt and parmesan. Mix until coated.
Place sausage and pepper mixture on a lined cookie sheet.
Bake for 30 minutes.
During last 10 minutes of sauce and peppers cooking, increase heat of sauce to medium-low to thicken sauce.
Bring a large pot of salted water to boil.
Cook Pasta until al dente.
Drain Pasta, top with sauce and then peppers and sausage mixture and sprinkle with grated parmesan.
